Simple Honey-Almond Granola

Yields: 6-8 servings

Prep time: 10 minutes Cook time: 20-30 minutes Ingredients:

  • 3 cups old-fashioned rolled oats (not quick-cooking or instant)

  • 1 cup whole or sliced almonds

  • 1/4 cup packed brown sugar

  • 1/2 cup honey 1/4 cup avocado oil

  • 1 1/2 teaspoons ground cinnamon

  • 1/2 teaspoon salt 1 teaspoon vanilla extract (optional, but highly recommended)

Instructions:

Preheat Oven & Prep: Preheat your oven to 325°F (165°C). Line a large, rimmed baking sheet with parchment paper. This will prevent sticking and make cleanup a breeze. Combine Dry Ingredients:

In a large bowl, combine the rolled oats, almonds, brown sugar, cinnamon, and salt. Stir everything together until the dry ingredients are well-mixed.

Combine Wet Ingredients: In a separate, small bowl, whisk together the honey, avocado oil, and vanilla extract.

Mix Granola: Pour the wet ingredient mixture over the dry ingredients. Use a spatula to thoroughly stir everything until all of the oats and almonds are evenly coated.

Bake: Spread the granola mixture onto the prepared baking sheet in a single, even layer. Bake for 20-30 minutes, stirring the granola with a spatula every 10 minutes to ensure it bakes evenly and doesn't burn. The granola is done when it's golden brown and fragrant.

Cool & Store: Remove the baking sheet from the oven and let the granola cool completely on the pan. It will become crunchy as it cools. Once cool, break it into clusters and store it in an airtight container at room temperature. It will stay fresh for up to two weeks.
